Weeknights can feel boring at times, but these dinner recipes are anything but! One of my goals over the last year was to try a new recipe each week to try and switch up our meals. Matt loves a variety of food and we both enjoying trying new recipes, so I started a Pinterest board and started looking for some fun ones to try. Before we get to the recipes, I’ve created a few free printables to make meal planning a bit easier too!

Now, let’s get to the recipes! Here’s a few of the go-tos we’ve loved this year:
1. Egg Roll in a Bowl
This recipe by Fit Foodie Finds is one of our favorites for a quick and easy weeknight meal. There’s just the right amount of kick and the leftovers heat up really well, which is a must for us!
2. Cozy Autumn Wild Rice Soup
For the perfect cozy soup, I love this one from Gimme Some Oven! It has a ton of vegetables, but tastes like comfort food, so it’s such a good one. After the first time I made it, I’ve found myself returning back to it time and time again.
3. Lasagna Zucchini Boats
For a healthy twist on a classic, these lasagna zucchini boats from Cooking Classy are a go-to! They leave us feeling full, taste delicious, and are great for leftovers.
4. Italian Chopped Salad
I’m a HUGE salad fan because I love the variety of textures and flavor. This Italian Chopped Salad by Lasting Ingredient is delicious and great as a side at dinner and then for lunches throughout the rest of the week.
5. Shrimp Fajita Bowls
These shrimp fajita bowls from The Real Food Dietitians are Whole 30 approved, but also has such great flavor.
6. One Pan Italian Sausage and Veggies
You cannot go wrong with this one! I love any sheet pan recipe and this one from Chelsea’s Messy Apron is so good. Just cut up a bunch of veggies and chicken sausage and toss it in the oven. We also serve it over rice, but it would be delicious with some bread on the side too!
7. Date Night Rigatoni
If you’re looking for a special date night in or just want to something fun on a week night, this Date Night Rigatoni from Pinch of Yum is SO GOOD! I’ve made it a couple times and we always have a lot leftover and it tastes amazing. It’s a bit creamier, but a good treat for once in awhile. These chocolate chip cookies would also make a perfect end to this meal 🙂
